Sweet Treat Sunday

Sunday’s for me are usually a great day to bake something quick, easy and fun. I know most people do scones… but they’re best eaten fresh out the oven and not commonly enjoyed throughout the week. So unless I know I’m having company for tea, it’s not often a Scone Sunday at my home.
So I decided to make some old fashion butter biscuits and the fun about this recipe is that it’s flop proof and the mixture makes enough to enjoy as a lunch box snack for the week. Cookie cutters are also not just for kids and creatively shaped biscuits make a great gift idea for someone you just feel like surprising. 
All you need is a large mixing bowl, measuring scale, rolling-pin, extra flour to dust, a variety of cookie cutters and fun decor of your choice.
1 cup butter
1 cup white castor sugar
1 egg
2 2/3 cups all-purpose flour
1 teaspoons vanilla extract/essence
  1.  In a large bowl, cream together the butter and castor sugar until light and fluffy. Beat in the egg, then stir in the vanilla. 
  2. Pour the flour into the sugar mixture; then cover dough, and chill for at least one hour. (I usually use this time to clean away the baking utensils)               
  3. Preheat oven to 200 degrees C.
  4. Press dough out onto cooled, clean flat surface lightly sprinkled with flour               
  5. Bake for 8 to 10 minutes in the preheated oven, or until lightly golden at the edges. Remove from baking trays to cool on wire racks
    Once your cookies have cooled you
         can decorate them… unless you
     want a sugar or a hundreds and
   thousands coating – this you sprinkle
     on just before you pop cookies in
          the oven. The same applies to
                    cherries and nuts. 
You can dip them in chocolate or enjoy them plain. You can even have a theme, say hearts, lips, cupids, words on Valentines day or animal shapes for a kiddies party. The other really great thing about these biscuits, are that they are not sweet at all, unless you fancy them up with a little sugar paste…
